Sure, some of the recipes would-be influencers recommend are in fact pretty abominable — check out @chefreactions on TikTok, Instagram or X for many, many examples — but I have stumbled across some pretty good recipes on many occasions, too. There are probably as many recipes for Marry Me chicken on social media as there are cooks. (Delish claims to have created the video recipe for the original dish, also known as Tuscan chicken, in 2016.) But in my opinion, the best variations hang their chef’s hat on a sauce made with sun-dried tomatoes, garlic and cream. Yum! This rich and luxurious entree is a definite step above the “engagement” chicken that caused a similar stir when it made its debut in Glamour magazine in 2004. That proposal-worthy recipe — saved for posterity in the 2011 cookbook “100 Recipes Every Woman Should Know: Engagement Chicken and 99 Other Fabulous Dishes to Get You Everything You Want in Life” — featured a whole chicken roasted with lemon and herbs. Awesome for sure, but not nearly as swoon worthy. I’ve been married for a very long time, so I’m not looking for a dish that will get me engaged. But who wouldn’t want applause when they put dinner on the table? That’s how Delish’s original recipe made it into the latest installment of “Dinner for Four for $25.” Usually when I’m building these economical meals, I do all my shopping in one store. This time, I shopped over the course of a weekend at some of my favorite haunts to see if that made a difference. (And no, I didn’t factor in the cost of gas, but maybe should have!) First stop after downing my Saturday morning latte and Nutella mele at a street-side table at Colangelo’s in the Strip District: Wholey’s Market, where I found boneless chicken breast at the bargain price of $3.89 per pound. I then crossed the street and headed down the block to Pennsylvania Macaroni Co., where I found several varieties of sun-dried tomatoes to chose from. I went with a jar of Ponti sun-dried cherry tomatoes for $5.09 — a definite splurge when your budget is only $25, but an ingredient I knew would deliver plenty of flavor. At Aldi, I found a bag of five huge lemons for $3.89, or 78 cents apiece, and a nice package of fresh broccoli for $2.28. A bargain, considering I would only use about two-thirds of it. The German supermarket chain known for its low prices and no-frills shopping experience (you have to deposit a quarter to get a shopping cart) also had butter — a main ingredient in my sandwich cookie dessert — on sale for $3.99 a pound. A bag of powdered sugar was pretty cheap, too, at just $2.09 for a two-pound bag. “Shopping” my pantry for ingredients I always have on hand, including garlic, olive oil, spices, rice, molasses and vanilla, once again helped keep costs down. Total bill: $24.38, or 62 cents under budget. Not bad when you consider the homemade dessert recipe makes more oatmeal sandwich cookies than a family can/should eat at one sitting. PG tested Sun-dried tomatoes could be considered a splurge item because even a tiny jar is expensive, but their concentrated, sweet and tangy tomato goodness add so much flavor to a dish! They are certainly the star of this chicken dish that has been making the rounds on social media platforms. Some say the entree is so good, you’ll get a marriage proposal out of it. At any rate, the Parmesan cream sauce that gets spooned on top of the chicken and rice will certainly make your diners swoon. This original recipe from Delish.com is a pretty easy dish to get on the table in quick fashion. Just remember to use a dry pot holder to take the pan out of the oven because it will be very hot; I very stupidly used a damp dish towel and now have another cooking scar. 4 (8-ounce) boneless, skinless chicken breasts Kosher salt Freshly ground black pepper 3 tablespoons extra virgin olive oil, divided 2 cloves garlic, finely chopped 1 tablespoons fresh thyme leaves 1 teaspoon crushed red pepper flakes 3/4 cup chicken broth 1/2 cup chopped sun-dried tomatoes packed in oil 1/2 cup heavy cream 1/4 cup finely grated Parmesan Fresh basil, torn, for serving, optional Cooked rice, for serving Preheat oven to 375 degrees. In a large ovenproof skillet over medium-high heat, heat 1 tablespoon oil. Generously season chicken with salt and black pepper and cook, turning halfway through, until golden brown, about 5 minutes per side. Transfer chicken to a plate. In same skillet over medium heat, heat remaining 2 tablespoons oil. Stir in garlic, thyme and red pepper flakes. Cook, stirring, until fragrant, about 1 minute. Stir in broth, tomatoes, cream, and Parmesan; season with salt. Bring to a simmer, then return chicken and any accumulated juices to skillet. Transfer skillet to oven. Bake chicken until cooked through and juices run clear when chicken is pierced with a knife, 10-12 minutes. Arrange chicken on a platter. Spoon sauce over. Top with basil, if using, and serve with cooked rice. Serves 4. — delish.com PG tested Broccoli is a reliable veggie when you need a little something extra to round out a meal and don’t want to spend a fortune. Here, it’s blanched until crisp-tender and then tossed with lemon juice and zest and a pinch of red pepper flakes. I used lemon olive oil (already on hand) for an extra burst of citrus flavor. 1 large bunch broccoli, separated into florets 2 tablespoons olive oil or butter 1 clove garlic, minced Juice and zest of 1/2 lemon 1 pinch (or two) red pepper flakes Flaky salt and freshly ground ground black pepper, to taste Place broccolini in a large skillet with about 2 inches of water; bring to a boil and cook until bright green, 1-2 minutes. Drain. Heat olive oil in the same skillet over medium heat. Stir in garlic and cook until golden and fragrant, 1-2 minutes. Add broccoli; cook and stir until heated through, 2-3 minutes. Squeeze lemon juice and zest over broccoli and season with red pepper flakes, salt, and pepper. These soft and chewy oatmeal cookies sandwiched with vanilla buttercream taste exactly the same. Actually, they’re better because they’re not made with corn syrup and artificial flavorings, but rather real butter and brown sugar. It’s important to let the cookies cool on the baking sheet for a few minutes before transferring them to a rack. Otherwise they will fall apart. The icing is very sweet, so you might want to reduce the amount of powdered sugar. For cookies 1/2 cup unsalted butter, at room temperature 1 cup packed light brown sugar 1 tablespoon molasses 1 large egg, room temperature 1 teaspoon vanilla 1 1/4 cups all-purpose flour 1/2 cup old-fashioned oats 3/4 teaspoon baking soda 1/2 teaspoon salt For filling 1/2 cup unsalted butter, at room temperature 3 cups powdered sugar 2 tablespoons heavy cream 2 teaspoons vanilla Pinch of salt Preheat oven to 325 degrees and line two sheet pans with parchment paper. In stand mixer outfitted with whisk attachment add butter, brown sugar and molasses and beat on low speed until combined. Gradually increase speed to medium-high and beat until smooth, about 2 minutes. Scrape down sides and bottom of bowl with spatula, then add egg and vanilla extract. Beat on medium-high speed until combined. Add flour, oats, baking soda and salt and beat on low speed until just combined and no streaks of flour remain. Use a 1/2 -ounce cookie scoop tor tablespoon measure to portion out equal amounts of dough. Roll the dough in your hands to smooth the edges, then place 2 inches apart on prepared pans. Bake until cookies have puffed up and are set and firm around the edges but still somewhat soft in the middle, 9-11 minutes. Remove sheet pans from oven and allow cookies to rest on the pans for 5 minutes, then use a metal spatula to transfer cookies to a cooling rack to cool completely. Once cookies have cooled, make filling. In stand mixer fitted with the paddle attachment, combine butter, confectioners’ sugar, cream, vanilla and salt. Beat on low speed, gradually increasing the speed to high, until creamy and fully incorporated, about 45 seconds. If filling is dry, add a small splash or two of cream. Assemble cookies. Using a small offset spatula or butter knife to spread about 2 tablespoons of filling onto the bottom side of one cookie, then place second cookie on top to sandwich. After more than 50 years, legendary broadcast journalist Chuck Scarborough stepped down from his daily duties anchoring the news at NBC 4 New York. His last day anchoring at the 6 p.m. news at WNBC was Thursday, Dec. 12. Chuck will continue to be a part of the WNBC family and provide special reports and contributions to special station projects and programming. Here's his message to viewers as he closed out his final broadcast: This is my final broadcast as anchor of the evening news on NBC 4 New York. First and foremost, I am profoundly grateful for your trust. Without that, I would not have survived for more than half a century in this job and been allowed to occupy this front row seat to the history of our fascinating metropolis and the world beyond for so long. Four months after I arrived in 1974, President Nixon, who won a landslide election just two-years earlier, resigned. The first presidential resignation in the nation’s history. In 1975, New York City plunged into effective bankruptcy and the Vietnam war came to a chaotic end. The pace of breaking news has been relentless ever since. We’ve been through blackouts together, riots, crime waves, hurricanes, blizzards, economic crises, corruption (public and private), 9/11, wars and a pandemic. But just as important were the stories of human achievement in the arts and sciences, of forgiveness, kindness, recovery, and resilience. If there is one overarching lesson I’ve learned, it is that we are more resilient than we realize – individually and as a city and nation. We get knocked down, and we come back stronger. I will be eternally grateful for the privilege of working with so many dedicated, brilliant and talented broadcast journalists on both sides of the camera, some risking their lives in dangerous places to bring you the news. In this age of algorithms and cable channels herding the citizenry into like-minded silos of A.I., and social media fictions suffocating truth, it has never been more important to do what they do so well: hue to the basic principles of accuracy, objectivity and fairness. I’m going to leave you with a final thought I shared with my NBC colleagues earlier this year when they gathered in the Rainbow Room to celebrate my 50th anniversary with the National Broadcasting Company – itself a quintessential American success story, founded by a Russian immigrant named David Sarnoff, who began by selling newspapers at age 15 to help support his struggling family. I urged my colleagues to do something I still do to re-establish perspective, appreciation, a sense of mission. Walk out on Fifth Avenue, and look back through the Channel Gardens, across the skating rink, above the statue, at this towering building with awe, and say: “I work here. I work here, and this is important. What I do is important. I work for the National Broadcasting Company, the oldest and largest television network in this country, with a storied history.” Feel the weight of that history. The weight of the responsibility that we all bear to get it right, to do it well, to make it interesting. It’s an honor to work with you. That message was aimed at our work here, the grinding challenges of daily news gathering. But it just as easily applies to our city, and to our country, and to all of you – all of us. Thank you, and good night.The NFL issued a security alert to teams and the players’ union on Thursday following recent burglaries involving the homes of Chiefs stars Patrick Mahomes and Travis Kelce. In a memo obtained by The Associated Press, the league says homes of professional athletes across multiple sports have become “increasingly targeted for burglaries by organized and skilled groups.” Law enforcement officials noted these groups target the homes on days the athletes have games. Players were told to take precautions and implement home security measures to reduce the risk of being targeted. Some of the burglary groups have conducted extensive surveillance on targets, including attempted home deliveries and posing as grounds maintenance or joggers in the neighborhood. Burglars have entered through side doors, via balconies, or second-floor windows. They’ve targeted homes in secluded areas and focus on master bedrooms and closet areas. Players were warned to avoid updating any social media with check-ins or daily activities until the end of the day. Posting expensive items on social media is discouraged. The homes of Mahomes and Kelce were broken into within days of each other last month, law enforcement reports show. The break-ins happened just before and the day of Kansas City’s 26-13 home victory over the New Orleans Saints on Oct. 7, where Kelce’s superstar girlfriend Taylor Swift watched from the stands. AmaZulu traditional prime minister Thulasizwe Buthelezi says he knows nothing about being removed from his position by King Misuzulu kaZwelithini. This comes after media reports on Friday that the Zulu king had removed him as prime minister. In a statement on Saturday, Buthelezi, said he found out about his supposed axing on social media and had not received any formal communication. “His majesty has not informed me of his decision to release me from my duties as his prime minister. I only learnt about this decision through social media and thereafter through a WhatsApp message from Prince Simphiwe of KwaMinya yesterday [Friday].” According to reports by News24 , the king's reasons for removing Buthelezi were unhappiness with his actions and how he had deviated from what was expected of him by the monarch. Letters purported to be from the Zulu king about the firing of Buthelezi are circulating on various social media platforms. The traditional prime minister criticised the monarch, saying an important decision like removing him from his position should not be handled in such a manner. “One of documents which is circulating is a notice addressed to amakhosi of the kingdom signed by Prince Simphiwe himself, which is astonishing that an announcement of such magnitude should be conveyed to amakhosi in a such an informal manner.” Buthelezi added he always obeys summons by the king and will continue to should he be called to present himself before him. He also stated that he served at the behest of King Misuzulu and would relinquish his traditional prime ministerial duties should the king inform him to, saying he would continue to serve the Zulu monarch as an ordinary person. “I have served the king from the first day that he assumed his position as king of the Zulu nation and will continue to serve his majesty as an ordinary subject of the monarch.” Buthelezi also expressed concern about the king's decision to appoint Mpumalanga businessman Jacob Mnisi and a woman known as the king's “gogo”, Rejoice Tembe, to control the Ingonyama Trust Board. “The presence of Jacob Mnisi and these lawyers from Mpumalanga in the affairs of the Zulu kingdom does not augur well for the wellbeing and future of Ingonyama Trust.” He ended the statement by thanking the king for appointing him and promising to continue to serve the Zulu nation. Thi Cam Nhung Lê says she grew up with Sebastien Gauthier in Quebec City and considered him her best friend. Lê says Gauthier’s older sister was also on the boat in Florida’s Broward County when it exploded and she was taken to a hospital. She says Gauthier’s family was in Florida to celebrate the holidays and that his sudden death feels “unimaginable.” Video posted on social media Monday shows the vessel engulfed in flames following the explosion, with a thick column of black smoke billowing into the sky. The Florida Fish and Wildlife Conservation Commission has confirmed that Gauthier died of his injuries, saying a preliminary investigation shows the 37-foot vessel exploded after its engines were started. (AP) — Eddie Lampkin Jr. and Donnie Freeman each posted a double-double and Jaquan Carlos finished an assist shy of joining them as Syracuse closed out its nonconference schedule with a 75-63 win over Bucknell on Saturday. The Orange evened their record at 6-6 with their sixth win in seven home games, taking a 12-point lead at intermission and maintaining it through the second half, handing the Bison (4-9) their seventh straight loss. Syracuse, which lost its Atlantic Coast Conference opener to Notre Dame, finished nonconference play 6-5. Lampkin and Freeman combined to score 24 first-half points and helped the Orange dominate the boards in the first half, 18-11. Pip Ajayi dunked near the 14-minute mark to get Bucknell within five, 48-43, but Elvin Edmonds IV missed a 3-point attempt to make it a one-possession game a minute later and Lampkin scored to push the lead to seven. Kyle Cuffe Jr. scored back-to-back baskets and Carlos added a layup to push the Syracuse lead back to a dozen points, 56-44. Lampkin finished with 18 points and 11 rebounds scored 15 points, grabbed 11 boards and dished three assists with a steal. Carlos posted 11 points with nine assists and three steals. The Federal Reserve’s second consecutive key rate cut could mean more than just lower borrowing costs for the average consumer — state and local governments stand to benefit, too. Lower interest rates may bring changes for housing development, tax revenue, debt refinancing and bread-and-butter projects like roads, water and sewer, state and local government officials told States Newsroom. The Fed’s cut earlier this month followed an aggressive rate-hiking campaign to beat down inflation, and it came years after the last time the U.S. central bank lowered interest rates. Key borrowing rates now stand at 4.5-4.75%, and inflation has cooled to 2.7%. Economists expect another rate cut in December. “On average, the lower the interest rates are expected to help stock market returns if historical trends hold,” said Liz Farmer, who focuses on budgets, fiscal distress, tax policy and pensions at The Pew Charitable Trusts. “So generally, you would expect a more positive effect on your average pension portfolio that has a good amount invested in equities.” This change means states and localities will have lower borrowing costs, which will make it easier to make big long-term changes in infrastructure, to see higher sales tax collections as a result of more spending, and it is likely to result in better pension performance in an environment where stocks tend to respond to lower rates, fiscal policy experts at Pew say. In 2021 and 2022, states had record high revenue growth due in part to federal pandemic aid and the impact of the federal aid on workers and businesses, according to Pew. But that kind of growth was unsustainable. Recently, nearly all states have entered into a slower revenue growth environment, said Brian Sigritz, director of state fiscal studies at the National Association of State Budget Officers, a professional membership group for budget and finance officers. More than three dozen states had a fall in revenue in fiscal year 2023, Pew’s analysis found. At least five states experienced budget shortfalls in fiscal year 2024, the think tank explained. “States overall are remaining in a strong fiscal position. It’s just that we’re starting to see slower growth compared to what we did see for those a couple of years after the start of the pandemic,” he said. “That was really a unique set of circumstances where we had the additional federal aid provided by all the different Covid relief bills and at the same time where state revenue growth was growing so strongly, and that led to very strong growth in tax collections.” Sigritz said that states, which have to almost entirely use borrowing for infrastructure and capital projects, will benefit from lower borrowing costs as a result of the Fed rate cuts. David Schmiedicke, finance director for the city of Madison, Wisconsin’s finance department, said he’s hopeful that the lower cost of borrowing will reduce the cost of public infrastructure when seeking construction bids. “We’re seeing a lot of development, even with the higher rates. Madison is an attractive place to live. People from around the country are moving here,” he said. Rebecca Fleury, the city manager for Battle Creek, Michigan, said interest rates affect key services the public relies on, including fire departments. “[Interest rates] have an impact on our ability as a city of 52,000 to provide the full services that we do. Every little bit impacts us, because we have to buy fire trucks,” she said.“If there’s a decrease in one of our three largest revenue sources, we feel it.” But there are both pluses and minuses to the cut in the federal funds rate, Schmiedicke said, as it brings down the interest income states receive. “It probably will reduce the amount of investment income the city receives on its cash balances. We saw that go up dramatically in 2022 and 2023, so that’ll probably come down as the Fed cuts rates,” Schmiedicke said. Different tax policies also change how states and localities experience the Fed rate cuts. H.D. Palmer, deputy director for external affairs and principal spokesman on fiscal and financial issues for California Gov. Gavin Newsom, said that the lower interest rates are overall positive for the nation’s largest state because of the concentration of technology firms there, its progressive tax rate, and the taxing of capital gains and stock options as personal income. “When the markets are doing well, those types of firms that are concentrated in California do well and in consequence, our revenues do well,” Palmer said. The Alabama Department of Finance told States Newsroom that it is closely following the Fed’s actions as it “closely follows all actions that could impact our citizens and the State’s revenues.” But the state agency said it may take some time to see any of the effects of recent rate cuts. “While recent changes in the federal funds rate may lead to increased state revenues, absent a significant change in the rate, the impact on revenues and expenditures would not likely be seen immediately. We will continue to monitor and assess all economic indicators to ensure steady, sustainable, conservative growth for the benefit of all Alabamians,” the department said in a statement. Schmiedicke said Wisconsin is very reliant on property taxes because although state law allows a statewide sales tax and counties can impose a 0.5% sales tax, cities other than Milwaukee have not been able to do so. The state also has strict limits on property tax increases. “We could see more development in the city and that could definitely help with our overall property tax base, as well as if it results in more travel and room taxes,” he said. As states and localities wrestle with how to provide more affordable housing, with nearly half of renters having to spend more than 30% of their income on housing, lower interest rates could help spur more building. Fleury said the costs of loans and labor and materials has been “astronomical,” making it hard for developers to build. Although she said Battle Creek would love to take advantage of Low Income Housing Tax Credits, it’s challenging to fund projects. “I think that a lower interest rate could really help us get farther along in our housing plans,” she said “If you can’t get your project to pencil within what they’re able to fund or finance, we just never make the list.” Despite lower interest rates creating a better environment for affordable rent and homes, states will likely continue to spend a lot of energy on housing programs, Sigritz said. Governors’ budget proposals and state of the state speeches have prioritized affordable housing more and more in the past few years, he said, and he expects this to continue. “Housing affordability is not an issue that’s going to go away overnight, and there’s still a need for more housing,” Sigritz said. “It takes a while to build additional housing even in the lower-interest environment.”
